With regard to oil, Dop Brisighella is considered to be an excellence. The Torre oil is no exception, a union of the Nostrana and Ghiacciola local varieties of cool and fruity bouquet, aromatic taste and bitter finish.
95% Nostrana, 5% Ghiacciola
The organic olio di Torre comes from olive tree groves extending themselves in the amphitheatres of Il Casone property, on the ridge which separates Modigliana town from Brisighella town.
It is mainly obtained from the Nostrana variety, and only partially from the Ghiacciola one. Its olives are picked at the veraison time, and cold-pressed in the same day.
Its smell is intense, with aromas reminding us of freshly-cut grass and green tomato; it tastes clear-cut on the palate. Artichoke and bitter almond notes dominate, and are also persistent in the slightly hot finish.
Match: toasted bread topped with oil, raw fish and beef tartare.
